All coffees begin as a single origin coffee or varietal which can be traced to a single country, region, farm, field, or even picking or process, and often characterized as a ¡°micro-lot¡±. We sample many different lots of coffees to find the one that best meets our exacting standards, and we develop individual origin roast profiles we believe exhibit the ¡°best¡± qualities of the coffee in the cup. These include subtle changes to bring out a shiny acidity, flavor notes of milk or dark chocolate, or a smooth silky mouth feel in the cup. Our single origins, selected from the top percentile grades of Arabica coffees, represent all the major coffee growing regions, as well as a selection of conventional and sustainable farming practices, including Organic. We also offer single origin decaffeinated varietals utilizing euro prep or Swiss Water Process (SWP).Our naming process is composed principally of four components: proper country name, region, estate and grade. We may also include additional wording to denote the micro lot, processing method or roast level.
